White Chocolate Chip Cookies

One of the great food loves of my life is a White Chocolate Chip Cookie. There is something about the super sweetness of the biscuit and the creaminess from the white chocolate that just makes my heart happy. The best version to buy is without a doubt the fresh cookies from the M&S bakery, to me they are perfection. However, there is just something about making cookies yourself which makes them taste even better. It took me years to find a really great cookie recipe but eventually my search prevailed when I stumbled across one of my absolute favourite baking blogs Lovin’ From The Oven.

Kim over at Lovin From the Oven is like my baking goddess. She is creative and I adore her pictures and amazing sounding creations. This is where I found my ideal cookie recipe titled unsurprisingly as ‘My Best Ever Chocolate Chip Cookie’ – I couldn’t agree more. I’ve made some very minor changes to her recipe (like change milk choc to white choc) and here it is. These cookies are chewy and soft in the middle and so scrummy. I hope you give it a bash and enjoy it!

Choc Chip Cookies - butter mix


400g Plain flour
1/2 teaspoon Bicarb of Soda
1/2 teaspoon salt
180g unsalted butter, melted
240g light brown sugar
120g caster sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
200g white chocolate chips


STEP 1.Melt the butter slowly in a pan,  be careful not to over heat. Just melted and no more.

STEP 2.Mix  together the flour, baking soda and salt in a bowl and set aside.

STEP 3.In a large bowl, cream together the melted butter, brown sugar and white sugar until well combined. Add the vanilla, egg, and egg yolk and mix well until light and creamy.

STEP 4.Mix in the dry ingredients into the butter mix with a wooden spoon until just combined.

STEP 5.Stir in the chocolate chips using a wooden spoon.

STEP 6.Cover the bowl with cling film and chill in the fridge for at least an hour.

STEP 7.Preheat the oven to 165c.

STEP 8.I weigh out 50g balls of mixture (should make 23 cookies) and very lightly roll into a loose ball for a second or two – you don’t want to get the mixture warm. Then press down very lightly with a fork.

STEP 8.Place them on a baking try reasonably far apart

STEP 9.Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted.

STEP 10.Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
