I have had a mega busy and hellish week, so you will have to excuse the lack of bantz in this post. I am just going to jump in with a little introduction to these heavenly cookies and hook you guys up with this super easy recipe.

These cookies are not only a taste sensation but left the penthouse smelling glorious!
When I cooked these little beauties the smells was a cross between a delicious bakery and Autumn. The sweet vanilla aroma was amazing in its self but then you throw in a cheeky pinch of cinnamon and I was in Autumnal smelling heaven.
This is a cracking cookies recipe and is a real favourite of mine. I hope you enjoy.
2 tsp vanilla extract
230g plain flour
100g white sugar
140g brown sugar
1 tsp ground cinnamon
¾ tsp bicarb of soda
¾ tsp baking powder
½ tsp sea salt
200g dark chocolate – cut into smallish chunks
Place your butter in to pan and melt over a medium heat until the butter starts to brown slightly and smells beautifully nutty. Remove the butter from the heat and add the vanilla, set aside to cool for 10-15 minutes.
While waiting for the butter to cool sieve the flour, cinnamon, baking powder and bicarb of soda into a large mixing bowl, then add the sugars and sea salt…give the ingredients a little stir just to make sure they are all combined.
Add the butter to the flour mixture and mix with a wooden spoon until just combined, then add the egg to the mixed and stir the mixture again until all the ingredients are combined.
Add the chocolate chips and stir again until the chips are evenly distributed.
Using a tablespoon measure out some cookie dough and using your hands lightly roll into a ball before placing on to a baking sheet. Making sure you leave plenty of room for the cookies spreading.
Once all the dough is measured out place them in the fridge or freezer for an hour (or longer) to chill.
When you are read to bake your cookies pre heat the oven to 190C
Just before you pop the cookies in the over lightly sprinkle some sea salt over the top of the cookies.
Bake for approximately 10 minutes or until the cookies have browned around the edges.
Cool on the tray for 5 minutes before transferring to a wire rack to cool completely before enjoying.
