We have brownies, then the baking gods gave us Blondies and now I would like to introduce you to Biscoffies – Biscoff Brownies!

I have had a jar of biscoff spread in my larder cupboard now for about 3 months, and every time I go to the kitchen I can’t help but scope a little bit out and eat it straight. I figured it was time to get crazy and actually do something with it. Naturally my mind turned to baking and what I could go with it, I decided that Brownies would be an excellent idea And I can confirm I was right – natch!

It’s a different texture to a regular brownie – slightly more biscuit like and a little chewier around the edges, while the middle gives you have mega lush gooey texture we all love. It tastes nutty with a hint of spice and the white chocolate in the biscoffies gives you amazing bursts of creamy sweetness.

This is a really simple recipe to follow and only takes a few minutes to throw together. In fact it took me longer to measure out all the ingredients that it did to make the batter.
If you make brownies a lot take note that the batter ends up looking more like a thick gunky paste rather than a brownie mix….don’t worry about it, it cooks out fine.

130g Plain Flour
1/2 tsp Baking Powder
1/8 tsp Bicarb of Soda
1/2 tsp Salt
80g Unsalted Butter – Melted
200g Light Brown Sugar
1 Large Egg
1 Egg Yolk
1 tsp Vanilla Extract
200g Biscoff Spread
150g Good Quality White Chocolate – Chopped
8 Biscoff Biscuits (optional)

Pre-heat the oven to 175C and line a 9×9 baking tin with greaseproof paper – set to one side.

Into a bowl measure out the Flour, Baking Powder, Bicarb and salt. In a separate bowl measure out the brown sugar ensuring there are no lump. Set both to one side for now.

In a large pan over a very low heat melt the butter. You just want the butter melted and no more. Leave the butter to cool for a few minutes before adding the brown sugar to the pan, mix using a wooden spoon until combined. Add the Egg, Egg Yolk and Vanilla and mix again until combined.

Add the flour to the pan and gently fold in the flour until just combined.

Add the white chocolate and continue to gently fold until evenly distributed. Be very careful not to over mix you want to just combine everything and no more

Spread the batter into the pre prepared baking tin, I  added some broke up biscotti biscuits over the top of the brownie to add a little crunch, but that is optional so you can leave these off if you want to.  

Bake for 23-25 minutes – Do not over cook.

Allow to cool in the tin before cutting and enjoying.
