Pizza Dough Recipe

When I said about a year ago that I was introducing a 40 by 40 list to my blog, so many people were super generous offering recipes and advice for some of the things I wanted to learn to do.

One of those people is the lovely chef Heather Frew, who has one of my favourite Instagram accounts. She kindly offered to share with me her favourite, easy to make pizza base recipe. Surprisingly of all the home made food that I post on my insta grid this is the recipe I get asked for the most, and after checking with heather she’s had generously agreed that I can share it with you guys.

Now I’ve never made anything with yeast before so I’m not going to lie I was a little intimidated to work with it at first, but it turns out it’s incredibly easy to use in a recipe. To add to my yeast induced intimidation I had also never kneaded dough before either…. So this was a proper recipe of first for me. But like all good 30somethings I consulted the all knowing YouTube and quickly discovered about 3 million vids dedicated to kneading, and if you are in the same boat as me this is the clip I found most useful.

So I have made this pizza base now about 20 times and it has been consistently fantastic since my first attempt. Sure I’ve gotten a better feel for how thick I like my base, and a technique for kneading with my prefer but on the whole I think it’s virtually impossible to go wrong with this.

Now obviously when it comes to topping the world’s your oyster. I am a big fan of using lots of different types of cheese, and personally I like to make my own pizza sauce. I use my favourite tomato sauce base, which I just blitz with a blender a little to smooth out. But honestly buying a pre-made jar tastes just as good by the time you throw all your cheese and toppings over it.

This is such a great recipe, which I can’t recommend enough…. Not only does it taste delicious but it’s also an item knocked off my 40 by 40 list – make pizza…done!

225g strong white flour
½ tsp. salt
1 tbsp. olive oil
160ml warm water
8g fresh yeast or 1tsp dry yeast
pinch caster sugar


Step 1. Mix the yeast with warm water (not hot or boiling) and sugar…give it a good mix until the yeast has dissolved.

Step 2. Sieve the flour and salt into a bowl and add the yeast water to the flour along with the olive oil.

Step 3. Mix to a dough, I just use my hand to do this and knead for 10 minutes

Step 4. Shape the dough into a ball and place in an oiled bowl to prove. Leave covered with a cloth or lightly oiled cling film for between 1 and 2 hours. When the dough has doubled in size it is ready.

Step 5. Preheat your oven to 240°C

Step 6. Punch down the dough and knead back to a ball of dough and roll out with a rolling pin to an irregular round shape.

Step 7. Spread a thin layer of tomato sauce on the base and leave ½ inch around the edge without any sauce. Add toppings.

Step 8. Bake at  for 15 minutes approx. or until golden brown.
